
Primal Stuffed Bell Peppers
A colorful and nutritious twist on the classic stuffed pepper, made with our Primal Blend Ground Beef (80/20 with liver and heart) for added nutrients and rich flavor.
Ingredients
- 1 lb Primal Blend Ground Beef
- 4 large bell peppers (any color), tops cut off and seeds removed
- 1 tbsp olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 cup cooked rice (or cauliflower rice for low carb)
- 1 (15 oz) can diced tomatoes, drained
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/2 cup shredded mozzarella or cheddar cheese (optional)
Instructions
- Preheat oven to 375°F (190°C). Place bell peppers in a baking dish and lightly oil the outside if desired.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
- Add Primal Blend Ground Beef and cook until browned. Drain excess fat if needed.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Spoon the beef mixture into the hollowed-out bell peppers. Top with shredded cheese if using.
- Cover the dish with foil and bake for 30 minutes. Remove foil during the last 5 minutes to melt and brown the cheese.
Serving Suggestions
Serve with a simple side salad, roasted vegetables, or even mashed potatoes for a hearty, comforting dinner. These also reheat well for meal prep!
