Great tacos don't require a lot of effort — they require good beef. When you start with PCBC ground beef processed fresh at our Springtown facility, you don't need to do much to make it taste outstanding. This recipe keeps it simple and fast — ideal for any night of the week.
Ingredients
- 1 lb PCBC ground beef
- 8 small corn tortillas
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika
- Kosher salt and black pepper
- 2 tbsp water
- Toppings: finely diced white onion, fresh cilantro, lime wedges, salsa verde or pico de gallo, crumbled cotija cheese (optional)
Instructions
- Cook the beef. Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until fully browned — about 6–7 minutes. Drain excess fat, leaving a small amount in the pan.
- Season. Add all the spices, salt, and pepper directly to the cooked beef. Stir to coat. Add the water and stir — this helps the spices coat every piece evenly and prevents them from burning. Cook 1 more minute.
- Warm the tortillas. Char corn tortillas directly over a gas burner flame for 15–20 seconds per side until they blister and soften. No gas stove: use a dry cast iron skillet over medium-high heat, 30 seconds per side.
- Assemble. Double-stack the tortillas. Add a generous spoonful of beef. Top with diced onion, fresh cilantro, and a squeeze of lime. Add salsa and cheese if desired.
Tips
- Double the tortillas. Street tacos always use two corn tortillas per taco. They hold up better and give you better structure for juicy fillings.
- Season aggressively. Corn tortillas are mild and the filling carries all the flavor. Taste and add more salt or cumin if it feels flat.
- Build your own taco bar. Set out all the toppings in small bowls and let everyone build their own. This recipe scales up easily for a crowd.
