A well-stocked beef freezer does not need twenty different cuts. It needs five, chosen well, rotated consistently. Here are the five that cover the most ground for the most households.
1. 80/20 Ground Beef
The daily driver. Ground beef covers more cooking applications than any other cut we carry — tacos, burgers, pasta sauce, chili, grain bowls, fried rice, stuffed peppers, meatballs. It is the fastest to cook, the most affordable, and the one that gets used up first. Keep at least four to six pounds in the freezer at any given time.
2. Chuck Roast
The slow cook anchor. A single 2.5-lb chuck roast feeds four to six people and makes better leftovers than it does a first-night meal. Braise it Sunday afternoon, eat it Sunday dinner, use the leftovers for tacos and sandwiches through Wednesday. It is the highest per-serving value cut in the Individual Cuts lineup.
3. New York Strip or Sirloin
The weeknight steak. Not every steak night is a ribeye occasion. Strips and sirloins are less expensive, cook fast in a hot pan, and deliver genuine steak quality without the splurge. Keep two to four in the freezer for the evenings when a quick sear-and-serve is the plan.
4. Tablitas
The fast grill cut. Ten minutes from freezer-thawed to table if you plan ahead and marinate the night before. Tablitas are the cut that gets the grill out on a Tuesday in summer. At $16.99 per pound they are one of the best-value cuts we carry and among the most flavorful per dollar.
5. Beef Short Ribs
The weekend commitment cut. Not for every week, but worth having in the freezer for the Saturday when you want something that rewards a few hours of passive cooking. Short ribs on the smoker or in a Dutch oven produce a result that is difficult to replicate with any other cut at any other price point.
How to Maintain the Rotation
Move items from freezer to refrigerator two days before you plan to cook them. Order a refill when any category drops below one unit. Check the inventory every two to three weeks and reorder anything running low before it runs out entirely.
