Parker County Beef Company raises Texas Longhorn cattle on our ranch in Springtown, Texas, in Parker County west of Fort Worth. Texas Longhorns are a hardy breed adapted to this region. They graze on native grasses and are raised without added hormones or unnecessary interventions. The same cattle that produce the beef we sell by the cut and by the bundle also produce the fat that goes into every tallow product we make.
Rendered and Processed On-Site
The fat is rendered at our Springtown facility. We do not ship raw fat to a contract manufacturer. We do not source tallow from commodity suppliers. The process happens here, on the same property where the cattle are raised. Kidney fat and leaf fat are separated, cleaned, and rendered low and slow until the fat has fully liquefied and separated from any remaining tissue. The rendered fat is then filtered and cooled.

Extra-virgin olive oil smokes at around 375°F, which limits its usefulness for high-heat applications. Avocado oil reaches roughly 520°F, making it one of the highest smoke point options available. Tallow sits comfortably in the middle -- high enough for searing, frying, and sustained oven roasting, without the cost of avocado oil.
The second factor is oxidative stability. Smoke point tells you when a fat breaks down under heat, but stability under sustained high heat is a separate property. What to Cook with Beef Tallow
Searing steaks. Tallow is the traditional fat for cast iron searing. It handles temperatures well above what you need for a hard crust, it complements the flavor of beef, and it does not smoke out the kitchen at the temperatures required for a proper sear. Get the pan hot, add a small amount of tallow, and let it shimmer before the meat goes in.
Frying potatoes and french fries. Some of the most well-known fast food french fries in history were cooked in beef tallow before the industry switched to vegetable oils in the 1990s. Tallow produces a fry with a crisp exterior and full flavor. For home frying, keep your oil temperature around 325 to 375°F depending on cut thickness, and do not overcrowd the pot.
Seasoning cast iron. Tallow is one of the oldest materials used to season cast iron cookware. Apply a very thin coat to the cooking surface and heat the pan in an oven at 450 to 500°F for an hour. Let it cool and repeat as needed. The fat polymerizes slightly and bonds to the iron, building a non-stick patina over time.
Roasting vegetables. Coat root vegetables, potatoes, or hearty greens in tallow before roasting at high heat. The fat promotes even browning and adds a savory quality that butter can approximate but vegetable oils cannot. Carrots, parsnips, and potatoes roasted in tallow at 425°F are straightforward and consistent.
Pie crust. Animal fat produces a flakier, more tender crust than butter or shortening. Tallow works on the same principle as lard. Substitute tallow for an equal weight of butter or shortening in your crust recipe. The flavor is mild and does not overpower most fillings.
Storing Cooking Tallow
Tallow is shelf-stable at room temperature because of its saturated fat content. A sealed container stored away from direct sunlight and heat sources will keep for several months without refrigeration. Refrigeration will extend its useful life and is a reasonable choice if you do not cook with it daily.
Signs that tallow has gone rancid: a sharp, sour, or paint-like smell, a yellowed or discolored appearance, or a distinctly unpleasant taste. Fresh tallow has a mild, neutral beef smell when at room temperature, and little to no odor when cold. Why Tallow Burns Cleaner Than Paraffin
Paraffin wax is a byproduct of petroleum refining. It is the most common candle material in mass production because it is inexpensive and widely available. When paraffin burns, it releases compounds associated with petroleum combustion, including toluene and benzene in small amounts, along with soot that discolors walls and ceilings over time.
Tallow is animal fat. When it burns, it combusts into carbon dioxide and water vapor, the same outputs as other natural wax alternatives like beeswax and soy. There is no petroleum chemistry involved. The result is a cleaner-burning candle that does not coat nearby surfaces with residue.
Burn Time and Scent Throw
For a 16 oz jar candle, expect 60 to 80 hours of burn time under normal conditions. For best results: trim the wick to approximately a quarter inch before each burn. Allow the candle to burn long enough on the first use to melt wax to the edges of the jar -- this prevents tunneling, where the candle burns down the center and leaves a ring of unused wax on the sides. Tallow holds fragrance well, so scent throw is consistent throughout the candle's life.

Choose the lotion if you prefer a pump dispenser and a lighter texture. Lotions are easier to apply over larger areas and absorb quickly. The trade-off is that they are less concentrated, so for specific problem areas, the balm will outperform.
The soap is a reasonable complement to any of the above. Tallow soap does not strip the skin the way many commercial detergent-based soaps do.
