Pure Pasture™ is a distinct line within our operation. While our standard beef comes from conventional commercial breeds raised on a combination of pasture and grain finishing, Pure Pasture beef comes from Texas Longhorn cattle that are 100% grass fed and grass finished — raised on open pasture from start to finish, with no grain at any point in their diet.
The current product is Pure Pasture™ Longhorn Grass Fed Ground Beef (1 lb, $12.99). More cuts are in development.
The Breed
Texas Longhorn cattle are a heritage breed descended from Spanish cattle brought to North America in the 1500s. They shaped the American cattle industry during the great Texas cattle drives of the 1800s, when tens of millions of Longhorns were driven north to market. The breed nearly disappeared in the early 20th century as commercial British and Continental breeds replaced them — Longhorns were considered too lean and too wild for industrial beef production.
That leanness and the Longhorn's natural efficiency as a grazing animal are exactly what makes the breed appropriate for a 100% grass fed program. Longhorns thrive on pasture in a way that many conventional breeds do not.
The Grass Fed and Finished Difference
"Grass fed" alone is not a guarantee of a grass-finished animal. Under USDA labeling guidelines, an animal can be labeled "grass fed" if it spent part of its life on grass — and then be grain-finished for months before slaughter. Grass fed and finished means the animal ate only grass and forage for its entire life. No grain, ever.
Our Pure Pasture beef is grass fed and finished, no exceptions. The fat profile reflects this: higher omega-3 relative to omega-6, more conjugated linoleic acid, and an overall leaner fat composition than grain-finished beef.
Flavor and Cooking Notes
Grass fed and finished beef tastes different from grain-finished beef. The flavor is often described as more mineral, more "beefy" in a traditional sense, with less of the buttery richness that marbled grain-finished beef carries. This is a feature for people who prefer it and a meaningful difference for those accustomed to conventional beef.
Leaner beef cooks faster and dries out more easily. For ground beef, this means slightly lower heat and pulling from the pan slightly earlier than you would 80/20 conventional ground beef.
