Not all ground beef is the same. The fat-to-lean ratio changes how it cooks, what it tastes like, and which applications it performs best in. We carry five ground beef products, each built for a different purpose. Here is the breakdown.
Ground Beef 80/20 ($7.99/lb)
This is our standard ground beef and the most widely used in our lineup. The 80/20 ratio means 80% lean and 20% fat. The fat content is what makes a smash burger develop a lacey, crisped edge rather than a dry, shrinking patty. It is what makes a meat sauce coat pasta instead of sitting on top of it. It is what carries flavor through a taco filling that does not dry out in the pan.
80/20 is the default ground beef for professional kitchens for the same reason it should be the default for home kitchens: the fat is where the flavor and texture live. Leaner ground beef can serve specific purposes but 80/20 is the all-purpose starting point.
Hamburger Patties ($9.99 for 3 patties, 1/3 lb each)
Pre-formed from the same 80/20 blend. Consistent weight and size for even cooking without the prep step. The right choice for weeknight burgers when you want to go from freezer to grill in one step.
Chili Meat ($6.99/lb)
This is the most underrated product in the ground beef lineup. Chili meat is a coarser grind than standard ground beef — the individual pieces are larger and hold their structure during a long simmer rather than breaking down into fine crumbles. Texas chili is built on this cut. The difference between chili made with chili meat and chili made with standard ground beef is immediately visible: one has distinct chunks of beef in the bowl, the other looks like a uniform paste. For any long-simmered application where you want beef presence rather than beef paste, chili meat is the correct product.
Primal Blend ($9.99/lb)
Ground from multiple primal cuts for a more complex fat profile and deeper flavor than a single-muscle grind. If you have had ground beef from a good butcher that seemed to taste more "beefy" than what you normally buy, the difference was likely a multi-primal blend. Best applications: burgers where maximum flavor is the goal, gourmet meat sauces, any preparation where the ground beef is the featured ingredient rather than a background component.
Pure Pasture™ Longhorn Ground Beef ($12.99/lb)
