Most home kitchens run on vegetable oil and a drawer full of single-use spice bottles. There is nothing wrong with that setup, but there are two products that quietly improve most of what you cook with beef: a high-quality cooking fat and a seasoning blend built specifically for beef.
Fresh Beef Tallow
Our Fresh Beef Tallow (32 fl oz, $19.99) is rendered fat from our own Texas cattle. That is the complete ingredient list.
It has a smoke point of approximately 420°F, which means you can get a cast iron screaming hot without the fat degrading, smoking acridly, or breaking down into compounds you do not want in your food. Most cooking oils used for high-heat work — canola, vegetable, corn — are primarily polyunsaturated fats, which are chemically unstable at high temperatures. Saturated fat is stable. Tallow is almost entirely saturated fat.
Practically, this means tallow is the correct fat for searing steaks, frying potatoes, cooking hash, roasting root vegetables, and any application where the pan needs to be genuinely hot before the food goes in. It also contributes a mild, clean savory flavor — not overpowering, but present in a way that improves beef dishes specifically.
It was the standard American cooking fat until commodity seed oils displaced it in the mid-20th century. Home cooks who switch to it for high-heat applications do not usually go back.
PCBC Seasonings
Our house seasoning blend ($12) was developed in-house and designed to work across every cut we sell. It is not just for steak. It works on ground beef for burgers and tacos, on chuck roast before a long braise, on ribs as a dry rub component, and on vegetables cooked alongside any of the above.
The guiding principle behind the blend is that it should enhance beef flavor rather than compete with it. Big-box seasoning blends are often built to cover mediocre meat. A seasoning designed for quality beef is more restrained — salt, pepper, aromatics, heat balanced at the right levels so that the beef itself is still the loudest thing on the plate.
How They Work Together
Season your cut with the PCBC blend 30 to 60 minutes before cooking. Pat the surface dry. Get your cast iron hot with a spoonful of tallow. Lay in the steak. The tallow handles the sear; the seasoning handles the crust flavor. The beef handles everything else.
Both products are available in our Cooking collection and can be added to any beef order at checkout.
